What you need:

4 chicken breast halves (skinned and boneless)

3 tablespoons Kalamata Olives (finely chopped)

3 tablespoons spreadable garlic and herb cheese

2 teaspoons chopped, fresh rosemary

2 teaspoons Dijon mustard

2 teaspoons lemon juice

1 teaspoon honey or agave

Olive Oil (about a tablespoon)

 

How to make Olive & Cheese Stuffed Chicken Breasts:

Butterfly the chicken breasts and stuff them with a mixture of olives and cheese.  Secure the chicken breasts with toothpicks (soaked in water to prevent burning).  Let sit in refrigerator for 30 minutes.

Whisk rosemary, mustard, honey, and lemon juice together in a bowl.

Preheat oven to 375, then heat the olive oil in an oven-proof skillet on medium-high.

Sprinkle salt and pepper on the chicken breasts and lightly brown in the skillet for a few minutes.

Brush the herb and honey mixture over the top of the chicken.

Place skillet in the oven and bake for 15 to 20 minutes or until juices from the chicken are clear.
